Recipe: Roasted Vegetable Medley
What You'll Need
24 oz. Vegetable Medley (about ½ of bag)
3 Tbsp vegetable oil
4 Tbsp butter
4 cups course, dry bread crumbs
1 cup Parmesan Cheese, shaved
1 tsp cayenne pepper
How to Make It
Preheat oven to 350°F
In a large skillet, heat oil and butter over medium heat until butter begins to foam. Sauté bread crumbs in pan, stirring until golden. Stir in Parmesan cheese and cayenne pepper.
Meanwhile, steam vegetables in microwave safe bowl until tender (about 5 minutes). Add steamed vegetables to pan, season with salt & pepper and mix well.
Transfer mixture to baking dish and bake in oven uncovered for 10 minutes. Garnish with additional Parmesan cheese and serve warm
