Recipe: Roasted Vegetable Medley
What You'll Need
- 24 oz. Vegetable Medley (about ½ of bag)
- 3 Tbsp vegetable oil
- 4 Tbsp butter
- 4 cups course, dry bread crumbs
- 1 cup Parmesan Cheese, shaved
- 1 tsp cayenne pepper
How to Make It
Preheat oven to 350°F
- In a large skillet, heat oil and butter over medium heat until butter begins to foam. Sauté bread crumbs in pan, stirring until golden. Stir in Parmesan cheese and cayenne pepper.
- Meanwhile, steam vegetables in microwave safe bowl until tender (about 5 minutes). Add steamed vegetables to pan, season with salt & pepper and mix well.
- Transfer mixture to baking dish and bake in oven uncovered for 10 minutes. Garnish with additional Parmesan cheese and serve warm
